I'm a busy wife & mom who works all day & cooks & cleans all night. I have a culinary degree... but don't come here looking for masterpieces, I am all about simple, easy, & quick cooking. I have been a vegetarian since somewhere around July 2003, or at least that's when I *think* it was (oh, how the mind loses its grasp on things). The question I always hear is: WHY? (Followed closely by: "You don't eat ANY meat? No beef? No chicken? What about fish?"...) First let me say - I am a lacto-ovo vegetarian. http://en.wikipedia.org/wiki/Lacto_Ovo_Vegetarianism (That means I eat eggs & dairy products.) So, no I don't eat ANY beef, chicken, or fish, and I gave up pork when I was about 12. I do love my dairy though, and the occassional egg. Now, on to the why. Well, it started as a health decision. Have you ever researched what's really in the meat you eat?! Then, having always been an animal lover, it also became mixed with a big heart for the poor souls of those innocent animals. Luke is not a vegetarian (although he eats less meat than the average Texan), and I will leave it up to each of our kids to make that decision for themselves.
